With the aid of an electric mixer, mix the eggs with the sugar until pale bulky. Join in the lemon zest, honey and olive oil, continue to beat. Preheat the oven to 190 º. Grease a round and low shaped baking tin with butter and line it with parchment paper, pour in the misture and bake in a water bath, during an hour and 15 minutes approximately. Turn out the pudding, still warm, with toasted part facing upwards. Sprinkle with powdered sugar and serve cold.
